Sangiovese is the primary grape in Tuscan Chianti wine. Our California Sangiovese is grown in a region sufficiently hot to allow full acid development and provides for deep, rich Sangiovese wine.

The vineyards of Windsor Oaks are located in Sonoma County, in the foothills and benchlands overlooking the Russian River Valley, between the cities of Santa Rosa and Healdsburg. The entire property is in excess of 700 acres, of which approximately 350 acres are dedicated to "Foreve Wild Open Space." The remaining 250 acres are planted in blocks of new and old vineyards carring the dual appelation of Russian River and Chalk Hill.

Some home winemakers make their own versions of the Super Tuscan blending their Sangiovese with up to 50% with Cabernet Sauvignon or Merlot or even Syrah.

2007 Chalk Hill Sangiovese

Grapes harvested extremely clean on 10/9/07. Very small berries, dramatically lower yield than anticipated. Check sugar. May require dilution to 24.5 brix with acidulated water. (Check BV website for Rehydration procedure.) Make starter of D254, Bordeaux Red, DV10 or Pasteur Red yeast. Add yeast food at start of fermentation and at 12 brix. Ferment with cap up to 85 degrees F. Push down often. Long skin contact OK. Malolactic fermentation required. After ML, have pH and malic acid teste. Add SO2 according to pH - maintaing SO2 level until bottled. Will benefit with light storage / flavoring with air dried French or American oak. Tastes like strawberries. May blend with a small amount of merlot, syrah or malbec.
